This study evaluated the anti-wrinkle activity of rutin treated at high temperatures and pressures. Different treatment temperatures and pressures were 200¡ÆC and 15 bar, 300¡ÆC and 100 bar, and 400¡ÆC and 250 bar, respectively. The collagenase inhibitory activity of each treated rutin ranged from 27.07-70.67% at a concentration of 1 mg/mL. Procollagen type-1 synthesis of the ethyl acetate fraction showed a 95.53% higher production rate than that of the control at a concentration of 50 ¥ìg/mL. The protein expression of Matrix metalloproteinase (MMP)-1 and MMP-3 was decreased by 68.59 and 33.36%, respectively, compared to that in controls at concentrations of 50 ¥ìg/mL ethyl acetate fractions. These results suggest that high-temperature and high-pressure treatment technologies can be used to develop functional food and cosmetic materials with anti-wrinkle activity.
